Research has been on the studies of antibiotic and antifungal resistant pathogens from foods, surfaces, plants and animals; cultivation of mushrooms and investigation of the antimicrobial and medicinal potentials of plant and mushroom extracts for prevention and treatment of diseases.

Research
Nutritional values of oyster mushroom, Pleurotus oestreatus
Different agricultural wastes; cotton waste, sugar cane bagasse, rice bran, rice straw and saw dust were used in the cultivation of Pleurotus oestreatus. The moisture content, crude protein, fat, fibre and ash contents of the fruit bodies; and the morphological characters of the fungi were monitored for the different agricultural wastes. The yield and the biological efficiency were also monitored. Cotton waste proved as the best substrate in terms of yields, weights, nutritional value and chemical composition of the mushroom. Rice bran was found to be effective as a supplement which must be added to enhance mushroom growth.
Antimicrobial properties of Plants Extracts
The search for new antimicrobials especially amongst plants and other naturals is currently on the increase. The research discovered some plants; Senna alata; Petivera alliacea and Allium sativum with antimicrobial properties for use against pathogenic microorganisms. The plants, though in different studies were discovered to possess antifungal potentials. In addition, Allium sativum exhibited ameliorative effect and preservative ability on the tested samples. These bioactive compounds could be used possibly for drug production in industries.
Medicinal potentials of some Nigerian higher fungi (mushrooms)
Health challenges arising from malnutrition, environmental pollution, toxins, stress and other adverse conditions that are capable of imposing compromised immune system are rampart. Also, malaria attack has remained a menace due to the occurrence of drug resistant parasites, rendering most antimalarial drugs ineffective. My research discovered the immunomodulatory and therapeutic potentials of some Nigerian mushrooms; Fomes lignosus, Termitomyces robustus, Lentinus subnudus, Lentinus subnudus, Pleurotus tuber-regium, P. pulmonarius and their combination. The prophylactic study was the first investigation to establish the preventive abilities of these higher fungi with ameliorative effect on the tissues of organs of experimental animals.
Environmental Health, Food and Water Contamination
These were feasibility studies of road side hawked foods and well waters consumed by the public in Osun state, Nigeria. There is information on the microbial contamination of street vended foods, and the study revealed that there is high prevalence of travellers’ disease (diarrhea and vomiting) in the state. People with symptoms of the disease were traced to the consumption of the road side hawked foods, and the well waters tested had high microbial load of antibiotic resistant pathogenic microbes.
